21 paysans, specialised in short circuits and bistronomy and Facundo have imagined together an immersive and sensorial gastronomic experience.
Built around the theme of "cultivated plant diversity" and in partnership with the MSPM (territorial association for the preservation of peasant seeds), it will allow guests to discover vegetables saved from extinction.
A farmer's seed is a seed that a farmer takes from his harvest, with a view to sowing it later! In other words, this is what all farmers have always done until the industrialisation of agriculture and the appearance of seed companies with non-identical seeds. It is this work of goldsmith that allows us to have unique and multiple vegetables that are often avoided in catalogues because they are not standardised enough.
Each Friday, a key vegetable for a unique five-course menu designed by Facundo Castellani and the resident chef of 21 Paysans Eric Cherval. All of this is accompanied by a food/wine pairing from La Part des Anges.
Florist Martin Fleur will decorate the tables and illustrator Isabelle Huc will offer watercolours based on the vegetables prepared.
