November in Nice Côte d'Azur

Welcome to your monthly appointment with Nice Côte d'Azur!
In the kitchens, Capouns, traditional Nice-style stuffed cabbage, are slowly cooking, while the Baous trails invite you to walk and contemplate the landscapes suspended between sea and mountains. With its heritage, territory, and generous nature, November is the ideal month to slow down, savor, and share experiences: an invitation to fully experience the authentic and warm Nice lifestyle.

RECIPE OF THE MONTH: THE CAPOUNS
Daube niçoise et ses gnocchis maison

Capouns, or stuffed cabbage rolls à la Niçoise, are a classic dish in local cuisine. Green cabbage leaves, rice, beef, bacon, and aromatic herbs from the garden come together in a recipe that is both rustic and refined.

Every family has its own version, but they all share the same generosity and, of course, the unmistakable olive oil of the region. Serve them piping hot, accompanied by a glass of rosé from the hills of Nice, for a typically Mediterranean meal.

Would you like to try your hand at this Nice specialty? Discover the authentic recipe on our website or take part in a local cooking workshop to learn all the chef's secrets!
